Recipe of the Month

With glorious summer holidays in the US, we thought is might be nice to give you an easy, yummy, healthy salad lunch recipe. Mango salad is a favourite here in Australia, very popular at our Sunday afternoon summer BBQs! Enjoy!

 

Summer Mango Salad

(all ingredients should be organic if possible)

250g snow peas

flesh of 2 just-ripe mangos, cut into chunks

2 just-ripe avocados, flesh cut into chunks

1 red pepper, deseeded and white pith removed, cut into thin strips

2 spring onions, thinly sliced

½ small red onion, very thinly sliced salad greens

 

Ginger-lime dressing

2 tablespoons neutral oil

2 teaspoons fish sauce

2 tablespoons lime juice

2 teaspoons grated fresh ginger

ground black pepper

 

Place snow peas in a bowl; pour over boiling water. Stand for 1 minute, drain and cool under cold water. Drain well and place in a salad bowl with other ingredients. (Don’t add the avocados until just before serving.)

In a jar, combine all the dressing ingredients and shake well. When ready to serve, gently toss dressing through salad. Serve on salad leaves.

Serves 8.
